I’ve put together some of my favourite dishes to serve up midmorning on a Sunday. They make the perfect treat to spoil mum with, or a special someone to you. 

Sweet or savoury, make one or many…you can’t go wrong with these.

My Favourite Bircher Muesli

This is a healthy version of bircher muesli, loaded with protein, fibre and quality fats. Option to make it vegan too.

2-Step Granola 

This granola ticks all the boxes and is a breeze to whip up. Serve with yoghurt and berries or seasonal fruit.

Vegan Chocolate Banana Muffins

These are so easy to make, totally packed with flavour and have a hint of indulgence with the warm, oozing chocolate filling.

French Toast with Maple Strawberries

French toast purchased from a café is often sugar-laden and not overly nutritious. This version of French toast tastes just as decadent but is sweetened with only a touch of maple syrup and delicious berries!

Corn & Zucchini Fritters

These versatile fritters pack a punch when it comes to veggies and flavour. They pair perfectly with my go-to fresh avocado salsa on top. I hope you enjoy them as much as I do!

Easy Green Eggs

This dish can be made using whatever green veggies you have in the fridge – I love kale, spinach and Brussels sprouts most! Add some pesto or chilli flakes to finish it off – yum!

Mediterranean Frittata 

I love the flavours in this protein-packed dish. It’s ideal for Sunday brunch and any extra can be easily stored and enjoyed throughout the week.
