But in reality, I think mine depends on what time of year it is. In the summer, I love a good lemony shortbread; in winter, I crave deeper flavors like molasses and ginger. Don’t get me wrong, I am not one to turn down a cookie ANY time of year…but there are just certain flavors and tastes that fit well with certain seasons and occasions!
Today’s cookie recipe is just perfect for Christmastime. It’s got everything you could ever want in a sweet treat. Chocolatey goodness. Rich, buttery flavor. Soft-baked texture. And this recipe is SUPER easy to make!
Chocolate Peppermint Brownie Cookies with Walnuts
With only 10 ingredients, these cookies are some of the simplest holiday cookies you’ll make all season long but also, some of the TASTIEST! It’s so amazing the flavors that simple, whole food ingredients can bring to a recipe. In this one in particular, the unsweetened cocoa lends its rich, bold taste making these extra chocolatey and fudgy, while the almond flour gives them a nutty and rich buttery flavor! Chocolate Peppermint Brownie Cookies
- Prep Time: 10 minutes
- Cook Time: 13 mins
- Total Time: 15 mins
- Yield: 6 cookies 1x

1/2 cup almond flour
1/4 cup coconut flour
1/4 cup granulated monkfruit
3 tbsp dark cocoa powder
1/2 tsp baking powder
a pinch of sea salt
2 tbsp Zero Acre Farm Cultured Oil
1 egg
1/2 cup dairy-free peppermint mocha creamer
1/4 cup chopped walnuts
Instructions
Preheat oven to 350 degrees F and line a baking sheet with parchment paper. In a medium bowl, combine dry ingredients (except walnuts). Whisk together and then add in oil, creamer, and the egg. Stir until evenly combined. Fold in walnuts and stir until evenly distributed.
Divide batter into 6 cookies on the baking sheet. Bake for 13-14 minutes. Remove from oven and let cool COMPLETELY on the baking sheet as the cookies will continue to cook as they cool. Store in the fridge for up to a week and in the freezer for up to a month!

I love any peanut butter themed cookie the very best, but I love chocolate cookies too!!!! The buttery goodness of a cookie combined with ice cream is my favorite. I didn’t actually eat a cookie yesterday, but I did eat chocolate cookie dough icecream… Does that count? :o)

I love these cookies so much! I substitute two tablespoons of sugar free chocolate syrup for the stevia syrup and add additional liquid splenda. And for the coup de grace I add two tablespoons of sugar free chocolate chips. This doesn’t add much to the net carbs either! They are divine – a just about perfect sweet treat.
