If you’re looking for a low carb, detoxifying salad that’s filled with yummy herbs, plant-based protein and healthy fats from avocado and nuts and seeds, you’re in the right place!

This Kickstart Detox Salad comes from my brand new plant based recipe book called Greens & Things and it’s perfect for the 17 Day Kickstart Diet. 

If you happen to be on the 17 Day Diet, this salad is for you, too! Keep reading as I’ll give you a few minor changes to make this 100% compliant for certain phases/cycles.

Kickstart Detox Salad Ingredients

This Kickstart Detox Salad has a few, but mighty ingredients.

It’s packed with plant-based protein such as quinoa and brain boosting, healthy fats such as avocado and nuts and seeds.

Here’s a quick rundown of the ingredients you’ll need:

  • parsley
  • cooked quinoa
  • avocado
  • cucumber
  • zucchini
  • red onion
  • olive oil
  • lemon juice
  • seeds and nuts

Which Phase of the Kickstart Diet is This Approved For?

This Kickstart Detox Salad is perfect for all phases of the 17 Day Kickstart Diet.

You may enjoy this salad as-is during the 10 Day Stabilize Phase.

If you want to make this for an earlier phase, you’ll simply omit the nuts and use only seeds during either the 3 Day Scrub or 4 Day Soak Up Phases.

Which Cycle of the 17 Day Diet is This Approved For?

Cycle 3 of the 17 Day Diet is the cycle when you’ll be able to dig into this Kickstart Detox Salad.

If you want to use this in an earlier cycle, such as cycle 2, you can make a few changes (such as omitting avocado, zucchini and the nuts/seeds), but then you have a totally different salad!

And a different salad is just fine, too!

What Substitutions Can Be Used in The Kickstart Detox Salad? 

If you’re not a fan of some of the ingredients, feel free to switch things up!

For instance, if you’d rather munch on lettuce rather than parsley, then choose your favorite greens instead!

If you don’t like quinoa (as I know it’s hit or miss with some), choose your favorite plant-based complete proteins.

Here are a few examples of complete proteins:

  • Buckwheat
  • Hemp Seeds
  • Chia Seeds
  • Tempeh

Plant Based Complete Proteins for the Kickstart Detox Salad

There are also other plant-based proteins that are not “complete”, but do provide a good amount of protein.

Here are a few examples direct from the 17 Day Kickstart Diet Food List:

  • Lentils
  • Chickpeas
  • Black Beans

Plant Based Alternative Proteins for the Kickstart Detox Salad

If you want to add your favorite animal protein, consider the following:

  • White Fish (any low-mercury type)
  • Salmon
  • Tuna
  • Lean Chicken

If you’re on the 17 Day Kickstart Diet, all of the animal based proteins mentioned above are approved for all phases of the diet!

Even though the Kickstart Diet is a “plant forward” way of eating, it’s not a vegetarian diet. Animal proteins are fine to use, but make sure you check the food list to make sure which animal proteins are approved for each phase.

If you’re on the 17 Day Diet, then you’ll know that all of these are appropriate for all cycles.

Ingredients

  • 2 bunches parsley, roughly chopped, around 1/4 cup
  • 1/4 cup cooked quinoa
  • 1 avocado, cut into cubes
  • 1/2 cucumber, cut into cubes
  • 1/2 zucchini, cut into cubes
  • 1/2 small red onion, finely diced
  • 1 tsp. olive oil
  • juice of 1 lemon
  • 2 tbsp. mixed seeds and nuts, to garnish
  • Salt and Pepper, to taste

Instructions

    1. In a medium bowl, add parsley, avocado, quinoa,
      cucumber, zucchini, and onion and toss to combine.
    2. Drizzle with olive oil and lemon, season with salt and
      pepper, then mix to combine and serve sprinkled with
      nuts and seeds.

Kickstart Diet – All Phases (omit nuts on Scrub and Soak Up Phases)
17 Day Diet – Cycle 3
